Abstract

The antioxidant activity of the 3'-daidzein sulfonate sodium (DSS) was investigated by employing several in vitro assay systems, including 1, 1-diphenyl-2-picrylhydrazyl (DPPH · )/peroxide anion/hydroxyl radical-scavenging, peroxidation of polyunsaturated fatty acid from yolk lipoprotein induced by Fe2 method, and β-carotene/linoleic acid assay system. DSS showed scavenging activity against free radicals such as DPPH · ,peroxide anion and hydroxyl radicals. Furthermore, DSS exhibited powerful inhibitory effects on peroxidation of polyunsaturated fatty acid from yolk lipoprotein induced by Fe2 and notable inhibitory effects on β-carotene/linoleic acid assay system at all the tested concentration levels. The results suggested that the biological functions of DSS might correlate with its powerful antioxidant activity.
