Abstract

Carnosine (β-alanyl-L-histidine) is a naturally-occurring dipeptide that can provide buffering capacity, chelate metal ions and protect biomolecules from oxidation or glycation. The chemical and physical properties of carnosine and its determination methods were summarized.
