Abstract

Objective To explore the effect of sodium metabisulfite on the determination of vitamin B12 (VB12) in infant food and dairy products by microbiological method. Methods By adding mass concentration gradients of 0, 0.0025, 0.005, 0.02, 0.08 and 0.16 mg/mL sodium metabisulfite to the standard working solution and the sample solution, the content of VB12 in the experimental samples of different treatment groups was detected and the results of quality control samples were analyzed, the promotion node of sodium metabisulfite on Lactobacillus leichmannii and its effect on the extraction of the original form of VB12 were explored. Results Adding sodium metabisulfite with a mass concentration of 0‒0.16 mg/mL to the standard solution could promote the growth of Lactobacillus leichmannii. Sodium metabisulfite could promote the extraction of native VB12 in the samples in the range of 0‒0.05 mg/mL, and as the concentration of sodium metabisulfite increases, the extraction of native VB12 would be proportionally increased. Conclusion In the concentration range of 0‒0.16 mg/mL, sodium metabisulfite can promote the growth of Lactobacillus leichmannii, increase the extraction rate of native VB12, and thereby increase the stability and accuracy of the test results.
