L-potassium ascorbate is a food nutritional fortifier approved for use under GB 14880-2012 "National Food Safety Standard-standard for the use of food nutritional fortifiers". It can be used as one of the sources of vitamin C. There are discrepancies in the regulatory standards regarding the limits of heavy metals (lead, total arsenic, mercury) for L-potassium ascorbate between international and domestic guidelines. This paper compared the current domestic and international standards for L-potassium ascorbate and assessed the heavy metal contamination in products available in China. The study aimed to provide insights for formulating heavy metal limit indicators in China's L-potassium ascorbate standards, thereby offering references for standard development.
