- Abstract
A paper is devoted to the analysis of the characteristics of the chemical composition of gainers, which are safe protein-carbohydrate supplements in sports nutrition, for the development of domestic technology for gainers with high nutritional and biological value, enriched with natural biologically active substances. Modern trends in the development of the sports nutrition market indicate a growing demand for the products of this segment of goods in the world and in Ukraine. However, despite their popularity, the domestic assortment of sports nutrition products, including gainers, is mainly represented by imported products. The characteristics of the composition of the protein and carbohydrate components of gainers are given and analyzed. To achieve the fastest possible growth of muscle mass in the formulations of protein-carbohydrate supplements, it is advisable to combine fast and slow proteins and carbohydrates. Among the “fast” proteins, whey proteins are often used as the most physiological and complete proteins, as well as their hydrolysates. “Slow” proteins are represented by casein, micellar casein, egg and soy proteins, flax proteins, the latter are a source of glutamic acid. Carbohydrates have a decisive influence on building muscle mass, as a source of quick energy for restoring physical strength. The combination of fast (glucose, sucrose) and slow (maltodextrins with different dextrose values, cluster dextrin, native and modified starches, fiber, etc.) carbohydrates allows you to provide the body with energy for a long time. Analysis of the protein-carbohydrate composition of gainers indicates the need for comprehensive research to develop domestic technologies for the production of gainers.
