- Abstract
An analysis of the electromagnetic dehydrators developed by the authors is carried out, a reserve for reducing energy consumption is determined, provided that steam energy is utilised by its thermal transformation. Significant disadvantages of evaporators and methods of solving existing problems and contradictions are revealed. The combination of the influence of the microwave field and the heat pump on the system is proposed. Innovative methods of dehydration using heat pumps in the food industry are considered. A schematic diagram of an energyefficient two-stage electrodynamic dehydrator with a heat pump is formed. A comparison of energy efficiency indicators of various traditional dehydration technologies and the proposed innovative device has been carried out. A methodology for calculating the energy efficiency of systems with forward and reverse energy flows is presented. Schemes of multi-stage dehydrators with heat pumps are analysed. The results of a computer experiment with a twostage and a four-stage dehydrator are presented. It is shown how the overall efficiency increases due to the formation of reverse flows. The issues of optimisation of systems with reverse flows are considered. It is shown that the use of an electrodynamic apparatus at the last stage allows obtaining a highly concentrated high-quality solution, and the use of secondary steam energy on the basis of heat pumps can significantly increase the energy efficiency of the system. An innovative installation with combined systems of electrodynamic and heat pump types is proposed. The modes of its operation and optimisation are determined.
