Abstract

The article offers information on a study regarding the production of pectin polysaccharide complexes with dicarboxylic acids. The complexation of pectin with succinic acid was studied as a function of temperature. The procedure of pectin complex synthesis involves the treatment of an aqueous pectin solution with succinic or fumaric acid. The study shows that the acids incorporated in the complexes have a reduced toxicity and ulcerogenic action on the mucose of the gastrointestinal tract.
