- Abstract
This article discusses recent advances in the use of enzymes in the food industry. Enzymes obtained from plants, animals, and microorganisms are used to aid in food digestion, speed up food processing, and improve the quality of food products. The global market for food enzymes is growing and expected to reach USD 4194 million by 2032. The article also explores the mining and modification of food enzymes, as well as the production and application of these enzymes. Technological innovation, such as biosensor technology and nanotechnology, is playing a crucial role in the development of the food enzyme industry. The article concludes by discussing the future trends and challenges in the field of food enzymes.
