- Abstract
The article investigates the association of meat and meat components with the risk of bladder cancer. The meat components which were found to be potentially carcinogenic in relation to cooking and processing include nitrate, nitrite, heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). The results of the study revealed that there is an increased risk of bladder cancer with total dietary nitrite and nitrate plus nitrite from processed meat. It also showed that there is a positive correlation between red meat and bladder carcinogenesis.
