- Abstract
INTRODUÇÃO O novo azeite de dendê híbrido ou óleo de palma bruto híbrido Unaué HIE OxG (OPBH) é um óleo superior em carotenoides, ácido oleico e tocotrienóis e possui menor quantidade de ácido palmítico e esteárico, em comparação aos óleos dos frutos das palmeiras de outras espécies e, em razão da presença desses compostos promotores de saúde, tem sido reconhecido como “equivalente do azeite de oliva”. No entanto, enfrenta suscetibilidade à degradação desses compostos justificando o nanoencapsulamento para aumentar sua estabilidade química e superar os obstáculos à sua utilização na forma livre. Além disso, encapsulantes biodegradáveis, como coprodutos de frutas, possuem a vantagem da sustentabilidade e do alto conteúdo em fibras e compostos bioativos. As nanopartículas podem ser aplicadas na fortificação de alimentos, com ação bioativa ou função conservante e sua obtenção por nanoprecipitação é um método vantajoso por atingir uma alta eficiência de encapsulação para substâncias lipofílicas. Ainda, convém substituir solventes como acetona por outros menos tóxicos, a exemplo do álcool de cereais. Dessa forma, o objetivo deste estudo foi obter nanopartículas de OPBH por nanoprecipitação com farinha da semente de jaca como encapsulante. MÉTODOS As nanopartículas de OPBH (N-OPBH) foram preparadas por nanoprecipitação. Farinha da semente de jaca, álcool de cereais, Tween® 20 e OPBH formaram a fase orgânica (FO), com emulsões filtradas (membrana de 0,22 μm) e não filtradas; enquanto á gua e Tween® 80, a fase aquosa (FA). Após o gotejamento da FO em FA e posterior agitação magnética, o álcool de cereais foi evaporado em rota evaporador e as N-OPBH foram caracterizadas quanto ao tamanho de partícula e índice de polidispersibilidade (PDI) (Zetasizer Nano ZS, Malvern Instruments). A análise estatística foi realizada com auxílio do teste t-Student, para comparação das médias (p<0,05), usando o programa SAS® Studio, a partir de dados em triplicata. RESULTADOS As N-OPBH obtidas por filtração da FO apresentaram um tamanho médio de partícula menor (364,2 ± 9,0 nm) que as obtidas sem filtração (537,9 ± 20,7 nm) (p<0,05). Em relação ao PDI, as duas formulações apresentaram boa uniformidade no diâmetro das nanopartículas, sem diferença estatística entre os valores de PDI com e sem filtração (p>0,05) (PDI = 0,11 ± 0,03 e 0,12 ± 0,07, respectivamente). CONCLUSÃO Houve sucesso na obtenção de N-OPBH encapsuladas com farinha de semente de jaca por nanoprecipitação e uso de solvente não tóxico, sendo que a filtração da FO favoreceu a obtenção de partículas menores. N-OPBH têm potencial para produção de alimentos funcionais, devido à composição de fitoquímicos com propriedades antioxidantes, além do alto conteúdo em ácido oleico, gerando assim uma perspectiva promissora à saúde. Outrossim, aplicações com foco na conservação de alimentos e ação corante são identificadas.
