- Abstract
A growing body of Se-enriched foods have been produced using biofortification strategies to address inadequate Se intake, high toxicity, and low bioavailability of traditional Se supplements. Se-enriched foods are beneficial in the condition of Se deficiency, ineffective under the circumstances of Se sufficiency, and detrimental in the case of excessive Se intake.
