- Abstract
Objective To investigate the effects of different storage temperatures on the key quality attributes of fresh Lilium davidii var. unicolor and to establish predictive models, providing a theoretical basis for its storage and transportation. Methods Blanched fresh Lilium davidii var. unicolor scales of uniform size were stored at 4, 25, and 37℃. Changes in appearance, moisture content, water activity, and microbial content were examined. Kinetic models and microbial growth models were used to predict shelf life and analyze the effects of different storage temperatures on the shelf life of fresh lilies. Results The sensory quality, moisture content, and water activity of fresh Lilium davidii var. unicolor decreased with prolonged storage time. As crucial physicochemical indicators, the regression equations of moisture content and water activity on the Arrhenius equation had linear fitting coefficients (R²) greater than 0.99, indicating good linear regression. Furthermore, the first-order microbial model exhibited high linear fitting accuracy, accurately predicting the trend and quantity changes of bacterial growth during storage. Conclusion The predictive models based on moisture content, water activity, and total microbial count can be utilized for shelf life prediction of fresh Lilium davidii var. unicolor. This study provides a reference for post-harvest quality and shelf life research of fresh Lilium davidii var. unicolor and holds significant practical guidance significance for the production, storage, and transportation of fresh Lilium davidii var. unicolor.
