- Abstract
The incentive for healthy eating contributes to the consumption of fish, and tilapia filet stands out as a product that meets these needs. Slaughtering and industrialization in refrigerators is of great importance in the national scenario, meeting the demand generated in the agri-food chain. Tilapia has been a major highlight to consumers and industry due to its nutritional and sensory quality, as well as its versatility. In this scenario, it became necessary to produce several studies in which tilapia and its mechanically separated meat were used as bases in products, some products being available on the market. The aim of this study was to carry out a bibliographic review on the industrialization of tilapia, with respect to patents, commercialized products and innovations in industrialized industry. Comprehensive bibliographic research was carried out using databases of scientific literature: Science Direct, Scopus, Scielo and Capes Periodicals. In relation to patents, a low number of publications was obtained due to the high bureaucracy in the process. However, a high volume was observed with several types of products with commercial possibility, however, it was noted that there are no studies that prove the industrial viability of tilapia products. As regards the analysis of products that are already marketed in Brazil, it was noted that brands with little expressiveness and distribution of the same. This is related to several factors such as lack of investment and large territorial extent. Therefore, this bibliographic review demonstrates the viability of the industrialization of tilapia that may contribute to the increase of commercial products in Brazil in the future.
