- Abstract
The article presents a response surface model (RSM) for estimating Escherichia coli O157:H7 growth under differential experimental conditions. The authors report that mathematical validation of the RSM demonstrated that it predicts growth rate values on the fail-safe side in aerobic conditions and within the accepted range and accuracy factor as well as lag time. The results also show that temperature had the greatest effect on the kinetic parameters.
