- Abstract
INTRODUÇÃO O óleo de palma bruto híbrido Unaué HIE OxG (OPBH) possui baixa acidez, menor teor de ácidos graxos saturados e maior de ácido oleico, além de maiores quantidades de carotenoides (efeito corante e pro-vitamínico A), comparado ao dendê convencional. Esse novo azeite possui atividade antioxidante e antimicrobiana, devido a composição de fitoquímicos com estas propriedades. No entanto, sua utilização industrial é limitada, tendo em vista à instabilidade. Assim, o nanoencapsulamento surge como uma alternativa, podendo atuar como um sistema controlado de liberação para os compostos bioativos do azeite híbrido. Além disso, vem crescendo o interesse pelo uso de encapsulantes mais sustentáveis e alternativos aos sintéticos, o que demostra um potencial para a utilização de polímeros naturais obtidos de coprodutos de frutas. Sendo assim, o objetivo deste estudo foi nanoencapsular o OPBH por homogeneização, utilizando a farinha da semente de jaca e do albedo do maracujá como agentes encapsulantes. MÉTODOS As nanopartículas de OPBH (NP-OPBH) foram preparadas pelo método de homogeneização, utilizando como encapsulante a farinha da semente de jaca (1:2; amostra/encapsulante), e o álcool de cereais como solvente. Além disso, foram elaboradas NP-OPBH com a farinha do albedo do maracujá (1:2). Em seguida as nanopartículas foram caracterizadas quanto ao tamanho de partícula e índice de polidispersibilidade (PDI) (Zetasizer Nano ZS, Malvern Instruments, Malvern, Reino Unido). Os dados foram submetidos a análise de variância (ANOVA) e as médias comparadas pelo teste de Tukey (p<0,05). RESULTADOS Todas as emulsões elaboradas apresentaram aspecto homogêneo e coloração amarelada. As NP-OPBH com farinha do albedo de maracujá exibiram tamanho de partícula de 458,18 ± 15,35 nm, apresentando, portanto, tamanho nanométrico. Já o PDI foi de 0,31 ± 0,11, o que evidencia uma boa uniformidade. As NP-OPBH com farinha da semente de jaca exibiram tamanho de partícula de 212,98 ± 6,47 nm (nanométrico) e PDI de 0,16 ± 0,05, ou seja, apresentaram menor tamanho e índice de polidispersibilidade, comparadas as com albedo de maracujá, diferindo estatisticamente entre si (p<0,05), o que demonstra uma distribuição mais homogênea destas nanopartículas. CONCLUSÃO Estes resultados evidenciam o potencial da produção de nanopartículas pelo método de homogeneização utilizando coprodutos de frutas como encapsulantes. Destaca-se as NPOPBH com a semente de jaca, que apresentaram menor tamanho e PDI, diferindo estatisticamente das NP-OPBH com albedo de maracujá. Assim, as NP-OPBH tem potencial para ser utilizada como uma alternativa sustentável para aplicação do OPHB na indústria de alimentos, seja para fins de fortificação (característica pro-vitamínica A) e/ou ação bioativa e /ou conservante, tendo em vista a composição de fitoquímicos no OPBH.
