- Abstract
Streptococcus mutans is the key pathogen causing caries, which adhere to the tooth surface and forming biofilm. Recent years, more attention has been paid to the inhibition of biofilm by phytochemicals, which are important sources for exploring new biofilm inhibitors. In this paper, the regulatory mechanism of surface adhesion process, two-component regulation system and quorum sensing system of S. mutans on biofilm were summarized. Based on the mechanism of biofilm formation, the inhibition mechanism of phytochemical components such as flavonoids, polyphenols and terpenes on S. mutans biofilm was investigated. The inhibitory effects were mainly reflected in: inhibiting the activity of key enzymes in the two-component regulatory system and quorum sensing system, change the surface characteristics of bacteria, bacteriostatic effect, and destruction of biofilm intermolecular forces. The review provided theoretical reference for the development of phytochemicals resistant to S. mutans biofilm.
