EVALUACIÓN DEL REEMPLAZO DE LA SACAROSA EN UN CONCENTRADO DE MANGO EMPLEANDO JARABE DE YACÓN (SMALLANTHUS SONCHIFOLIUS).

- Abstract
Los productos listos para consumir son un segmento alimentario de gran auge en la sociedad actual, dentro de ellos se encuentran los concentrados de frutas, que incluyen dentro de sus ingredientes grandes cantidades de azúcar, a la cual se asocian enfermedades no transmisibles como la obesidad y la diabetes. De acuerdo a lo reportado por la Organización Mundial de la Salud, la diabetes representará la séptima causa de muerte para el año 2030 afectando principalmente a la población juvenil. Como consecuencia, se han evaluado diversas alternativas para reemplazo de la sacarosa y se resalta el uso de fructooligosaácridos que son azúcares no digeribles presentes en diversos alimentos, dentro de ellos el yacón. En este estudio se evaluó el efecto del reemplazo de la sacarosa en un producto concentrado de mango listo para consumo. Para esto productos concentrados de mango preparados con 0 (control), 50 y 100% de jarabe de yacón (JY) como agente de reemplazo de la sacarosa fueron evaluados en sus propiedades químicas (contenido de humedad, actividad de agua, pH y °Brix), el color y la aceptación sensorial a través de un panel no entrenado. Se encontró que el pH, °Brix, actividad de agua y cambio total de color presentaron diferencias estadísticamente significativas (p<0.05), asociadas al reemplazo total de la sacarosa. La actividad de agua, contenido de humedad y pH fueron mayores en las formulaciones con 100% JY y disminuyeron respecto al incremento de la sacarosa; respecto al cambio total de color, se obtuvieron valores de 6 y 11% en los productos desarrollados con 50 y 100% de JY. Los resultados del análisis sensorial evidenciaron mayor aceptación en los atributos evaluados en los concentrados de mango con 50% JY. A partir de lo anterior se evidencia que se puede realizar un reemplazo parcial de la sacarosa sin que se generen cambios significativos en las variables evaluadas, generando de esta manera productos con menor contenido calórico que podrían contribuir a mitigar los problemas asociados al consumo de azúcar y permitiendo dar usos en la industria alimentaria a un producto promisorio en la región andina, como es el yacón.
