- Abstract
The article discusses the study on the impact of a high-pressure treatment on the immunoglobulin E (IgE)-specific binding activity and structural changes to bovine gamma globulin (BGG). The study discovered that IgE-specific binding activity and allergenicity of BGG were reduced through the high-pressure treatment. Such results suggest that the treatment would an effective food-processing technique to reduce allergens of BGG.
