- Abstract
The article discusses the typical Colombian dish "ajiaco," a soup made with potatoes, chicken, corn, and guasca. The author discusses the origin, history, and styles of the dish and also attempts to answer questions regarding regional differences and the chronology of its development. The article continues on with several comments made by historical figures regarding ajiaco. The article concludes with several comments on the rise of Colombian cook books and offers several different recipes for the dish.
