- Abstract
The article presents the study on the development of high quality and bio-functional wheat or rice products from pre-germinated and cooked rice of super-hard cultivar. It cites the materials and methods of the study including the preparation of rice samples, bread-making, and measurement of the physical properties of cooked rice grains. It states the addition of materials in providing high quality bread which include super-hard rice in resistant starch.
