- Abstract
The article focuses on the traceability and bovine spongiform encephalopathy testing in the beef industry in the U.S. It suggests that different cost effective technologies will likely be needed to facilitate a farm-to-fork meat system on a large scale in the country, especially for beef. It also offers a look at the emergence of a two-step traceability process.
