- Abstract
The article discusses research on preparation of a porcine plasma protein (PPP) nanocomposite film containing grapefruit seed extract (GSE) and evaluation of the antibacterial and antioxidative effects of the film in pork meat packaging. Topics discussed include preparation of PPP film to use blood released from slaughtering houses; application of PPP composite film containing GSE to pork meat, and decline in populations of inoculated Escherichia coli and Listeria monocytogenes in the meat.
