- Abstract
Mutamba (Guazuma ulmifolia) is a common species in the Brazilian cerrado, exotic in appearance, with a peculiar aroma and flavor. It is a fruit that is still little known, but it has great possibilities of food application due to the presence of nutrients. The preparation of jelly using the mutamba fruit is a way to add value to the cerrado fruits, which have specific physical-chemical and colorimetric characterization. Using the Adolfo Lutz analytical methods, results presented as mean and ± standard deviation were obtained: triplicate/sample for pH (3.4 ± 0.14), soluble solids (64.9 °Brix ± 0.14), humidity (30 .96 g/100g ± 0.04), total acidity (0.45 g/100g ± 0.01), citric acidity (0.29 g/100g ± 0.08), lipids (0.03 g/100g ± 0.07), proteins (9.81 g/100g ± 0.02), reducing sugars (9.87g/100g ± 0.02), carbohydrates (58.14 g/100g ± 0.07), vitamin C (1,270.12 mg/100g ± 0.03), ash (0.46 g/100g ± 0.29), total solids (69.04 g/100g ± 0.05) and fibers (0.62 g/100g ± 0.04), where the results of the physical-chemical analyzes demonstrated that the mutamba jelly has good gel formation. Water activity (AW) at 25°C the value found of 0.75 is considered ideal in jellies. Color analysis was performed using Minolta Colorimeter, where the sample was evaluated in the L, a* and b* system, and also in the C* color space and the H* hue angle. Therefore, the potential of mutamba was observed as an alternative for the development of a new product in the identity and quality standards required by the legislation for the production of fruit jellies.
