- Abstract
Huangjiu (Chinese rice wine) is a traditional fermented alcoholic beverage in China, with mellow taste and unique flavor. Due to the limitations of traditional microbial culture methods, it can not fully reflect the diversity of Huangjiu fermentation microorganism. High-throughput sequencing technology has the characteristics of simple method, higher throughput, lower cost and faster speed, and it can be applied to study microbial diversity in Huangjiu, which provides a favorable means for understanding the diversity of Huangjiu fermentation microorganism. In this paper, the development stage, principle, method, operation process, data analysis method of high-throughput sequencing technology and its application in the study of microbial diversity of Huangjiu were reviewed, and the research direction of microbial diversity of Huangjiu was prospected, in order to provide reference for comprehensive analysis of diversity and community structure of traditional Huangjiu fermentation microorganism.
