- Abstract
Contaminated elements and mineral elements in edible parts were determined respectively to understand the distribution of elements in crucian carp, silver carp and snakehead. The results showed that there were significant differences in the accumulation of elements in the edible parts of fish. The Al, Cr, As, Cd and Pb contents in the intima of crucian carp were significantly higher than those in other edible parts of crucian carp(P<0.05), but the Ca,P and Mg contents in the head of crucian carp were much higher than those in other edible parts of crucian carp(P<0.05). The Cr, As and Cd contents in the intima of silver carp were significantly higher than those of other edible parts of silver carp(P<0.05), and the total content of As(1.81 mg/kg) in silver carp was also significantly higher than those of other edible parts of crucian carp and snakehead(P<0.05), while the Ca, P, Mg and Fe contents in the head of silver carp were significantly higher than those of other edible parts of silver carp(P<0.05). The enrichment of Cd in the head of snakehead was very serious. Among the edible parts of the three species of fish, the Cd content(0.006 14 mg/kg) in the head of snakehead was the highest, while the Mg, Fe, Cu, Ca and P content in the head of snakehead was also rich.
