- Abstract
The effect of temperature on the stability of anthocyanin extract from aronia as pigment and ascorbic acid as copigment was evaluated. Different temperatures and copigment concentrations were used for the investigation of pigment:copigment interaction. Equilibrium constant of copigmentation process was determined. Thermodynamic parameters such as ΔG, ΔH, ΔS were calculated. At high temperatures, around 60oC destruction was observed. This is confirmation for the reversibility of the copigmentation process.
