- Abstract
Copigmentation of aronia anthocyanins with epicatechin was studied. Investigations were done at different temperatures from 20 to 80oC at heating system and cooling the same system at 80 to 25oC. The system was investigated with concentration of copigment from 1:1 to 1:50 molar ratio. The thermodynamic parameters ΔG, ΔH and ΔS of the system were calculated as function of temperature at heating and cooling. Obtained results confirmed that the interaction between pigment:copigment complex was destroyed at heating to 80oC and with following cooling to 20oC reversibility of the copigmentation process occurs.
