- Abstract
In this paper, we present a study in which we compare the chemical composition of the yeast cells which are in the phase of maximum multiplication and in lysis phase watching for: total nitrogen, raw protein, emphasizing of the fermentation degree and contamination with ARN using electroforesis in agarosis gel of the wine yeast, Saccharomyces bayanus (Alberts, et al. 2002, Popa et al, 1982).
