GELES AIREADOS DE AISLADO DE SUERO PROTEICO COMO NUEVAS MATRICES ALIMENTARIAS: EFECTO DEL TRATAMIENTO TÉRMICO SOBRE LA MICROESTRUCTURA Y PROPIEDADES MECÁNICAS.

- Abstract
Los geles aireados contienen agua y burbujas "atrapadas" en su estructura, por lo que ofrecen una amplia versatilidad para el desarrollo de productos. La incorporación de una fase gaseosa puede incrementar el espectro de posibilidades para la formación y percepción de la textura, reducción de la densidad calórica, liberación de aromas y creación de estructuras gastronómicas innovadoras. El objetivo de este estudio fue evaluar el efecto del tratamiento térmico en dispersiones de aislado de suero proteico (ASP) sobre la microestructura y propiedades texturales de geles aireados fabricados con estas dispersiones. Se prepararon dispersiones de ASP (9% p/p) y NaCl (0.4% p/p) a tres pH (6.50, 6.75 y 7.00). Las dispersiones fueron sometidas a tratamientos térmicos a tres temperaturas (70, 75 y 80 °C) por diferentes tiempos dependiendo del pH de la dispersión. Luego, las dispersiones tratadas térmicamente fueron aireadas mediante la aplicación de agitación mecánica a 2000 rpm por 3 min. Finalmente, las dispersiones aireadas fueron enfriadas a 10 °C por 24 h para formar el gel aireado. Los geles aireados fueron caracterizados en términos de su capacidad de retención de gas (CGR), microestructura y propiedades texturales. La temperatura del tratamiento térmico influenció la capacidad de retención de gas y el diámetro medio (DM) de las burbujas de aire de los geles aireados. La CRG y el DM disminuyeron con el incremento de la temperatura del tratamiento térmico, obteniéndose un valor máximo de CRG de aproximadamente 70%. El rango de los DM fluctuó entre los 530 y 700 µm. El incremento en la viscosidad de las dispersiones tratadas a mayor temperatura produjo una menor incorporación de gas en la estructura y menores diámetros de burbujas. Por otra parte, el esfuerzo de compresión de fractura disminuyó con un incremento de la temperatura del tratamiento térmico. Probablemente, agregados de mayor tamaño fueron producidos a mayores temperaturas, generando una estructura más débil. Un control del tratamiento térmico de las dispersiones de ASP permitió fabricar geles aireados con diferentes propiedades microestructurales y texturales que pueden ser utilizados como nuevas matrices alimentarias.
