- Abstract
The article discusses research concerning the activity of mucolytic enzymes in saliva. The activity is measured by decreases in the Congo red in acid alcohol or ACRA titer, in the precipitable mucoid or carbohydrate, and in the viscosity. The conclusions are that there is an association between hydrolysis of starch and gelatin and the ability to depolymerize salivary mucoid and that the pH level might affect mucolytic activity of microorganisms.
