- Abstract
The food and beverage consumption of a society, food preparation and cooking methods, food presentation and storage tools reflect the culture of that society. In this study, the presentation utensils used in the palace and public kitchens of the Ottoman period were compared with today's presentation utensils. Thus, it is aimed to reflect the cultural texture of the past to the present and to reveal the differences between the past and the present. In the study, the literature on the subject was reviewed, Topkapı Palace, where Ottoman artefacts are located, was visited and the equipment in the Ottoman period culinary culture was examined. The kitchen utensils exhibited in Topkapı Palace currently are the ones left after the destruction caused by the great fire. Ottoman period cuisine is divided into two as palace cuisine and public cuisine. According to the results of the research, it was observed that the presentation utensils used in the palace kitchen were generally made of porcelain and precious metals, especially gold and silver, while simpler and durable materials, especially ceramics and wood materials, were preferred in the folk cuisine It has been observed that there have been some changes in the design and usage areas of today's kitchen presentation utensils compared to the Ottoman period. As a result, although the names of some of the tools and the materials used have evolved over time, there are still presentation tools that continue to be used at present. This study is important in terms of revealing the change from past to present through kitchen utensils.
