- Abstract
The cold chain transportation of fresh food is a very complex system engineering. The whole process involves a wide range of goods, a wide range of sources and long transportation time. Fresh food, because of its own animal and plant properties, will lose a lot of freshness in the storage and transportation process, thus corruption and deterioration will directly reduce or even remove its commodity value. The establishment of microbial prediction model in food cold chain transportation is to describe the process of microbial proliferation or death from raw materials to final consumption of spoilage bacteria and pathogenic bacteria in food by mathematical equation. The main content of this model is to describe and predict the growth, survival and death of microorganisms under certain conditions, and then to apply mathematical model to microorganisms in food. Quantitative analysis of growth was conducted, and the appropriate models were determined by comparing Gompertz model, Richards model, Logistic model and Baranyi model.
