- Abstract
Using selenium-enriched yeast strain Pichia kudriavzevii XJ1-3 isolated by laboratory in the early stage as test strain in this experiment, the alkaline extraction conditions of yeast selenium-enriched protein were optimized through single factor test and response surface analysis. The results showed that the optimal alkaline extraction conditions of yeast selenium-enriched protein were obtained as follows: sodium hydroxide concentration 0.1 mol/L, liquid and material ratio 7.5: 1 (ml: g), and extraction time 140 min. Under these optimal conditions, the extraction rate of yeast selenium-enriched protein reached 12.62%, and the selenium contents in yeast selenium- enriched protein were 358.9 μg/g.
