- Abstract
The article studies the 1,1,-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging mechanism of 2-O-α-D-glucopyranosyl-L-ascorbic acid (AA-2G). The authors found some undefined peaks after performing a high-performance liquid chromatography analysis of the reaction mixture of AA-2G and the DPPH radical. They conducted a liquid chromatography mass spectrometry analysis of the undefined peaks to determine the reaction products of AA-2G with the DPPH radical.
