- Abstract
Milk is a noble food, which requires good hygiene and sanitary control during its production and conservation. Some indicators can be used for this evaluation, including the somatic cell count and mesophilic and psychrotrophic microorganisms in milk, which are influenced by several factors. Thus, the objective was to determine the count of mesophilic and psychrotrophic microorganisms and somatic cells in raw bovine milk obtained from different herds during storage of refrigerated raw milk. Statistically significant difference was observed between the use of manual and mechanized milking on somatic cell count, and the first group had a higher mean value. Relative counts of mesophilic and psychrotrophic microorganisms did not differ, and also were not influenced by the storage period. We conclude that use of the mechanized milking type resulted in a milk with lower somatic cell count in relation to the properties that use manual milking. However, the observed values for the enumeration of mesophilic and psychrotrophic micro-organisms did not differ.
