- Abstract
The objective of this work was to measure the carcass yield and meat quality of lambs fed with grass and supplemented with fermented sugar cane in aerobic form. It was carried out in two sites. One site had a group of 13 lambs of 11.5kg of initial live weight, confined and fed with grass, supplemented with sugar cane fermented in Cunduacán, Tabasco and 24 lambs with 20 kg of initial live weight, semiconfined and grazing in African Star grass and offered a suplement of sugar cane fermented in Huimanguillo, Tabasco. The animals were sacrificed at a weight of 32kg. The results were analyzed by means of descriptive statistic. Daily weight gain was 109 and 85g for the sites Cunduacán and Huimanguillo respectively. The weight and carcass yield in cold and warm temperatures was 13.5 and 14.14 kg; 42.04 and 43.09% and 40.28 and 41.45% for the system Cunduacán and Huimanguillo, respectively. The relationship between weight at slaughter and carcass yield had a negative correlation of -0.41. The pieces of greater weight were: leg, rib/skirt, back and trowel. The water retention capacity was 12.78, 12.8 and pH 5.49 and 5.71 for the system Cunduacán and Huimanguillo, respectively. The color of the fat was white in the lambs' carcasses for both sites. It is concluded that lambs fed with grass and fermented cane produce carcasses with a low quantity of white fat.
