- Abstract
The article presents a study on the morphology and crystal thickness of crystalline amylose-fatty acid complexes. The influence of amylose and fatty acid chain lengths on morphology and crystal thickness of crystalline amylose-fatty acid complexes was studied by transmission electron microscopy and by size exclusion chromatography of hydrolysis residues.
