- Abstract
The possibility of use of protein films made of fish collagen or gelatin as well as polysaccharide carrageenan films as carriers of enzymes (lysozyme or lysostaphyne), for preparation of microbiologically active packages, was investigated. It was found that crosslinking of such systems with N-[3(dimethylamino)propyl]-N'-ethylcarboimide (EDC) dśs not influence the activity of lysozyme immobilized in the films (Table 1). In case of lysostaphyne, its activity decreases after the film crosslinking (Table 5). Collagen films with lysozyme or lysostaphyne immobilized show higher activities than collagen-carrageenan or gelatin-carrageenan ones. The minimal lysozyme concentration needed to secure the activity of crosslinked collagen film toward Sarcina S1 microorganisms equals 0.2 mg/mL (Table 2 and 3). However, the use of lysostaphyne in an amount of 7 μg/mL secures the activity of crosslinked collagen film toward Staphylococcus aureus (Table 6). An introduction of k-carrageenan into the film (two-component system) causes decrease in activity as a result of interaction of enzymes with this polysaccharide (Table 1 and 4).
