- Abstract
This article reports on the urgent need to reduce salt intake in the U.S. The lifetime probability of developing hypertension in the U.S. is approaching 90 percent while worldwide the rate is just over 26 percent. The American consumption of sodium, which is double that of most of the world, is largely to blame. In the U.S., 77 percent of sodium comes from processed and restaurant foods. The authors say federal policy is needed in this regard.
