- Abstract
Brazil has a vast range of plants still unknown to a large part of the population, which can be used as food and are called Unconventional Food Plants (UFPs). This term was recently coined; however, these plants have always been part of the Brazilian regional cuisine. Among them is the ora-pro-nóbis, a plant with a high amount of protein present in its leaves and with significant potential to enhance the nutritional value of food preparations. In this way, the creation of tasty and easily executable recipes using ora-pro-nóbis can improve its acceptance and incorporation into more nutritious menus. The use of UFPs as an alternative for enriching school meals can also be considered of great importance since school meals represent the largest public policy to combat hunger, and a significant number of students from public schools in Brazil suffer from nutritional deficiencies. In this case, ora-pro-nóbis plays a complementary role in school meals, as well as for the vegetarian and vegan populations who increasingly seek healthy options without animal protein. The objective of this work was to propose gastronomic applications of the UFP ora-pro-nóbis for the vegetarian and vegan public, and also for the preparation of school meals, in order to enhance the nutritional quality of some recipes, due to its high protein content.
