- Abstract
The article presents a study on the development of a fluorescence fingerprint (FF) imaging method to visualize gluten and starch distribution in dough. It says that fluorescence images of gluten, starch and dough were collected in 63 different combinations of emission and excitation wavelengths. Furthermore, the results suggest that the FF imaging method is a powerful visualization tool which is applicable to several fields other than food technology.
