- Abstract
Lemon is a product for export, both in its primary stage (conditioned and packaged fresh fruit) and in its industrial phase (concentrated juices, essential oil and dehydrated peel). In Argentina, Tucumán is recognized for its lemon production in quantity and quality, since it is currently the main producing province nationwide with 1.5 million t year-1. The Tucumán lemon agribusiness system was strengthened and managed to consolidate itself in the international context, both in the export of fresh fruit and industrialized products. From this circumstance, the objective of this work arises to know the institutional, organizational and technological factors that contributed to this agribusiness system achieving and maintaining its position as the third exporter of fresh fruit and the first exporter of industrialized products in the scenario world. For this purpose, a discrete structural analysis was carried out, using both primary and secondary sources of information. The interpretation of the information obtained was carried out based on the analysis of institutions and the theory of transaction costs. The results indicate that the institutional environment of the agribusiness system favored its development, as well as the governance structures that were designed in order to carry out the transactions and that had an impact by generating low transaction costs and a propensity to invest.
