- Abstract
The aim of this study is to determine the consumption habits of milk and dairy products in Erzincan province and to determine the demographic and socio-economic factors that affect this consumption and the milk prejudices of the consumers. It is also aimed to determine the degree of preference of Erzincan Tulum Cheese in the cheese varieties. Milk, cheese and yoghurt consumption were the highest in cattle type with 91,3%, 76,9% and 89,7% respectively. A statistically significant effect (p <0,05) was found on the type of cheese consumed in the educational status. The reason for not choosing the products made from the sheep milk is the odour problem with 57%. In the study, white cheese, kashar cheese, cokelek and Erzincan Tulum cheese were preferred 40%, 12%, 16% and 28% respectively. Only 30,1% of the purchased raw milk consist of pasteurized-UHT milk. This situation makes it difficult to record milk production and consumption. It is hoped that this problem will be solved with the provision of industrialization in agriculture.
