- Abstract
Outbreaks of foodborne diseases occur constantly and constitute a public health problem in Brazil. Equipment and utensils with poor hygiene have been responsible for food poisoning, despite all the technological advancement and food control. The aim of this study was to analyze the microbiological profile of utensils (thermal serving trays and refills) used to serve patient meals at two hospitals in Belo Horizonte, Minas Gerais. A representative random sample was chosen, with 10% of all thermal serving trays and refills from each hospital, totaling 20 samples from Hospital Unit A and 25 samples from Hospital Unit B. The hygiene conditions of the utensils were assessed with the surface analysis method, using the Association of Official Analytical Chemists swab-test. At the assessed Hospital Units, the colony count of S. epidermidis was higher than 100UFC/4cm². At Hospital Unit A, S. aureus was not found and, at Hospital unit B, the colony count was 100UFC/4cm². The results suggest that the hygiene-health conditions of utensils are unsatisfactory and can represent a risk of contamination of the foods.
