- Abstract
The article offers information on the seal certification program that uses sensory analysis, which is developed by the California Olive Oil Council with the help of the University of California Cooperative Extension (UCCE) panel. The certification assures consumers that labeled oils are free of defects with extra virgin grade. It notes that the UCCE sensory panel has participated in research on pest management, and others, providing better understanding of the qualities of California olive oil.
