- Abstract
The article discusses a research study on how the sensory quality of fried fish flesh of Indian major carps are affected by culture systems and artificial diet. Conducted were experiments on feeding experimental fish species including Labeo rohita, Catla catla and Cirrhinus mrigala with 35% protein diet for 90 days. Results showed that variation in monoculture system resulted in juiciness and tenderness for the L. rohita and perceived flavour for C. catla while there were non-significant differences in colour, oiliness or tenderness observed in the polyculture system of these fried fish. Conclusions indicated that differences in tenderness and juiciness could be due to the artificial feed and fat contents that have enhanced the sensory characters.
