Optimization of selenium-enriched fermentation conditions of Ganoderma lucidum and anti-exercise fatigue activity of selenium polysaccharides.

- Abstract
In order to study the optimum conditions of se-enriched fermentation of Ganoderma lucidum, the effect of se-polysaccharide from Ganoderma lucidum mycelium on exercise fatigue activity of mice were studied. Single factor and response surface tests were used to optimize the fermentation conditions and analyze the anti-fatigue activity of selenium polysaccharide. The results showed that the optimum fermentation conditions were as follows : Na2SeO3 concentration of 39 mg/L, shaker rotation speed of 185 r/min, culture temperature of 28 C. under these conditions, Ganoderma lucidum mycelium dry weight was 12.47 g/L, selenium enrichment rate was 96.87%, selenium polysaccharide was 386.52 mg/L, the content of selenium in polysaccharide was 93.58 mg/kg. Se-polysaccharide could significantly increase the time of exhaustive swimming, decrease the contents of blood lactic acid, blood urea nitrogen and malondialdehyde, and increase the contents of liver glycogen and muscle glycogen in mice, increase the activity of antioxidant enzymes (SOD, GSH-Px) in skeletal muscle cells, thus alleviating the oxidative stress damage of cells. In conclusion, Ganoderma lucidum mycelium selenium polysaccharide obtained by selenium-enriched fermentation had good anti-exercise fatigue activity and had in-depth development and utilization prospects.
