Prepared and Separated Anti-fatigue Peptides from Wapiti Velvet Antler Blood Protein.

- Abstract
This paper was to choose the optimal enzyme to hydrolyze the blood protein and to determine the best condition to prepare and separate anti-fatigue peptide. And then it conducted to study the effects of the peptide on anti-fatigue in mice. The highest degree of hydrolysis (DH) reached 19.8%. The optimum hydrolysis conditions are as follows: pH value was 7.4, temperature was 52 °C, concentration of substrate was 8%, ratio of enzyme/substrate was 9.0, and time was 90 min. Choose three groups to experimentize in mice. After oral administration for 15 d, mice were forced swimming to death (30 ± 2 °C water) with 5% body weight loaded. The results showed that compared with control group, group I prolonged the swimming time significantly, it can reach 250 min (P < 0.001), increased the consumption of hepatic glycogen 38.4%, and decreased the level of lactic acid in muscle 44.9%. The group I from Wapiti velvet antler blood hydrolysis can improve sporting endurance and delay fatigue.
