- Abstract
The article presents an examination of various factors that contributed to trans fats being used as a replacement for saturated fats in the American food industry. According to the article, political pressure regarding the unhealthy aspects of saturated fats, food technology innovations, and activism regarding American health led food producers to replace saturated fats with partially hydrogenated soybean oil, or trans fats in the early 1980s. The role played by the Center for Science in the Public Interest (CSPI) and the National Heart Saver Association (NHSA), both activist organizations, in influencing the food industry towards change is discussed. Other topics include histories of soybean commercialization, the partial-hydrogenation process, and trans fat usage in American foods.
