- Abstract
Milk is highly consumed by the general population in several age groups. It is vital for the health of the consumer that this product is free of substances physico-chemical quality of whole milk commercialized in the southern region of Minas Gerais state, Brazil, 11 brands of UHT milk and four different brands of pasteurized milk were bought in supermarkets of the region. The physico-chemical evaluation was conducted according to official methods. Brands were subjected to the following analysis: total dry extract, fat content, crude protein content, ashes, carbohydrates, titratable acidity, density at temperature 15°C (g/ml), freezing point, analysis of the presence of antibiotics, chlorides, formol, hydrogen peroxide, starch, sucrose and hypochlorite. It was concluded that the majority of the samples were in accordance with the legislation, mainly the brands of UHT milk, presenting quality and security for the consume.
